![]() Chef Roger Swiss chef and owner Roger Dreier, a member of Les Toques Blanches and the Chaine des Rotisseurs, combines a traditional European approach with the imaginative use of fresh foods native to Mexico. Among the starters, try the country-style paté with green peppercorns or the smoked salmon and trout terrine. Entrées are no less exquisite, with an ample variety that includes coconut-breaded shrimp in a pineapple sauce, chicken breast in roquefort sauce, rack of lamb or the traditional filet of beef fondue.
