Widely cultivated around the world today, this grain was originally domesticated more than 9,000 years ago in central Mexico and to this day remains one of our country’s staple foods.
Its uses are quite varied, from feed for livestock to tourist attractions such as Guinness record winner Adrian Fisher’s world-renowned “Maize Mazes,” in which entire corn fields are turned into beautiful puzzle mazes with intricate designs that can only be appreciated while airborne.
In Mexico, corn is central to tortillas and atole, a sweet, warm drink with a creamy consistency. For a truly authentic experience, walk the Malecon to Los Arcos, where you will find the eloteros preparing esquites, kernels of corn served in a plastic cup with lime, salt, chili pepper, cream and grated cheese.
