Few traditional Mexican cuisine staples are as versatile as chilaquiles (chee-lah-key-less). For some, this humble treat is the best cure for a hangover. For others, they are the ideal comfort food, usually enjoyed for breakfast or brunch but equally fulfilling during the evening. Chilaquiles are prepared by frying corn tortilla strips in vegetable oil and combining them with green or red salsa, or even mole, grated cheese (manchego, Monterey Jack or fresco), chopped onions and sour cream. They can be soft or crunchy, served as is or with pulled chicken added to the mix, and with or without refried beans on the side. And like many traditional Mexican dishes, there are as many regional variations as there are so-called “authentic” recipes, the latter difficult to authenticate, as this savory dish dates back to Aztec times. They are a breeze to prepare at home—perfect for leftover ingredients—and equally fulfilling at the many local restaurants that serve them.
