Blanca Blue Restaurant & Lounge is pleased to announce that former Thierry Blouet disciple Leopoldo Cortés has joined the prestigious South Shore restaurant as its new executive chef. Cortés began his culinary career in Puerto Vallarta over 20 years ago, having spent over a decade working closely with Blouet.
“For me it’s more than a homecoming,” commented Cortés, who spent the past six years working outside of Mexico. Puerto Vallarta has evolved in its culinary offerings. “There are many more restaurants and patrons with more sophisticated tastes. We need to respond with innovative dishes.”
Prior to returning to Puerto Vallarta, Cortés spent time in Costa Rica working for an important hotel chain, and in Russia, where he was able to experience techniques and flavors that he is looking forward to incorporating into Blanca Blue’s menu.
