Café des Artistes’ chef Thierry Blouet was featured as a special guest at the 2011 Madrid Fusión international gastronomy summit that took place in said city last month. Considered the most important gastronomy congress, worldwide, the annual event gathered over 2000 participants and 36 celebrity chefs from Europe and the Americas, who offered demonstrations of their culinary specialties during three consecutive days. Blouet captivated with his presentation, titled “Modern Mexican Dishes Created With Pre-hispanic Utensils.”

Mexico has been represented in Madrid Fusión for three consecutive years, thus helping raise interest in Mexican cuisine, worldwide, as well as the implementation of Mexican, food-related exports throughout the world.
