Queso Fundido

Spanish for "melted cheese". Queso fundido is a mexican dish commonly served as an appetizer in restaurants along the country. Its typical ingredients are melted cheese (most commonly oaxaca and chihuahua but other type of cheeses may be used), chorizo, tomato, onion, chile and spices, and it is served while it is still hot in a small casserole and it is spooned onto tortillas for individual servings.
