It’s only natural that he grew up in the kitchen
Originally from Guadalajara, chef Cesar Barajas was born to a family of restaurateurs, so it’s only natural that he grew up in the kitchen, learning how to cook under his mother’s guidance. He moved to Puerto Vallarta eight years ago to join his father working at a restaurant, where he learned what the business was all about and fell in love with the culinary arts. Last year he joined Taste Restaurant at Casa Cúpula, making this his first season supervising its cuisine.
Cesar artfully combines aspects of Mexican cuisine with Taste’s Asian and Mediterranean dishes. His goal is to create high cuisine dishes that create an explosion of flavor on the palette, with subtle notes that allow you to appreciate each component on the plate.
